What’s Cooking?…Fig, Olive and Mascarpone Crostini

The first flushes of Autumn yield the most delicious Mediterranean ingredients, amongst them being olives, chestnuts, walnuts, grapes and of course figs.  Figs are ancient, fascinating and a truly delicious fruit.  They have enormous versatility for savoury and sweet dishes.  The delicate flavours are varied depending on the variety and can emulate flavors like strawberry and honey.  The colours are variable too, from large black figs with almost red inside to small and green with pink fruit.  Consume them whist they are fresh and in season.  The season is soon over and they don’t keep for long, so enjoy these wonderful fruits while they are in season.  They are delicious raw and if you don’t feel like cooking but want to make a quick delicious meal this may be for you.  It’s like a small ancient feast!

Ingredients

4 large figs, washed and slice each one into 8 wedges
10 large green olives, pitted.
2 tablespoons Mascarpone cheese
1/2 red onion or one eschalot finely sliced
Freshly ground black pepper
salt to taste
olive oil
fresh basil leaves to garnish

Four small slices of your favourite bread

Method

Mix the figs and olives together with a little olive oil.

Mix together the onion and Mascarpone, paper and salt.

Spread the cheese mixture evenly on to the toasts.  Then pile the fig mixture evenly onto the toasts.

Garnish each toast with an extra drizzle of olive oil and fresh basil.  Sprinkle with  extra pepper and salt to taste.  Serve immediately.  Good appetite!
