What’s Cooking?…Crumbed Pork Chops.

I know, before you say anything.  It’s not for everyone.  But for those who do like pork, then this is an easy and delicious meal.  In Australia, pork has long been promoted as “the other white meat”

That being said, this is a very satisfying meal  there is no real need to have another carbohydrate with this as the crumbs suffice.

This is how I do it.

Ingredients

1kg (approximately 6) pork chops, fat trimmed, bone in
2 rounded tablespoons plain flour
salt and pepper
2 eggs beaten
1 200g packet seasoned stuffing mix (seasoned breadcrumbs with mixed herbs)

oil / fat for frying

Method

Set oven to 180 degrees celsius.

Rinse chops under cold water and pat dry with paper towels.  Season the plain flour with salt and pepper.

Dip each chop in the seasoned flour, followed by the beaten eggs, then dip into the crumb mix.

Put a heavy based pan on medium heat.  add enough oil to well wet the base.  Fry 2 – 3 chops at a time, until golden.  add extra oil as necessary.  If the chops begin to stick, remove from heat for a minute or two, it will loosen, then turn.

Once both sides are cooked, put the chops gently into a baking dish or open pyrex dish and put into the oven.

Leave in the oven for  about 20 minutes before serving.  Serve with lemon wedges, favourite salad and greens of your choice.
