Pistachio Pesto

I’m just in the mood for pistachios at the moment.  This morning I thought why not make them int one of my favorite dishes and that is Pesto.  Home made pesto is sensational and easy to make.  I love to vary my pesto and make with whatever I have available.  Today t is pistachios.   Pesto is delicious on fresh bread just as it is or with a good ham, or on top of pasta.  Or add some to your favorite pasta sauce or meatballs.  Just a great dish to have on hand.


1 cup shelled pistachios
1 clove garlic
1 cup quality virgin olive oil
1 cup grated pecorino cheese
1 big bunch of fresh washed basil
Put pistachios into food processor and process until small.  Add garlic, olive oil and pecorino. pulse through.  Gradually add basil pulsing through after each addition.  That’s it!  Decant into two small serving bowls or lidded dishes.  Drizzle with a bit of extra olive oil.  Serve as desired.  Refrigerate until ready to use.
