What’s Cooking?…Spiced Baked Apples

If you have never baked or eaten this dessert – I promise you have missed out!  I’ve just picked some Golden Delicious apples.  These are very adaptable apples as they are good eaten fresh or cooked.  However you could use any apples you like.   I was thinking recently, I haven’t ever had baked apples in a restaurant or for that matter seen them on the menu.  I don’t understand why.  Maybe it’s considered old fashioned…..

Really, as desserts go this is a beauty.  It’s very simple.  Apples are always a good digestive.   They are not stodgy or heavy.   Baked Apples are really delicious and this is also a dessert which can be well adapted for people who are gluten intolerant or even vegan for that matter.

Whenever I make these, I will make a tray full.  Everyone always wants another or, they are delicious as a light breakfast or afternoon snack too with some natural yoghurt.  This can be made ahead of time, then baked when you are ready, or bake them all, then refrigerate and warm when required.

This is how I do it.

Ingredients

Fresh apples
sultanas or currants
ground cloves
cinnamon
2 teaspoon sugar per apple or more to taste
butter
 4-5 tablespoons water

 

Method

Choose a baking dish a suitable size for the number of apples you are baking.  Set the oven to 180 degrees Celsius.  Lightly oil the dish or grease with butter.
Wash the apples and core them. If you don’t really have an apple corer, use a sharp knife to work out the core of the apples.  Arrange the apples in the baking dish.

Fill each apple centre with sultanas or currants.  Put a small pinch of ground cloves onto the centre of each apple.  Sprinkle the 2 teaspoons of sugar into each apple.  Then add about a teaspoon of butter to the top of each apple.  Sprinkle cinnamon over all the apples.  Add the water to the bottom of the dish.

 n.b. if you want this to be a vegan dish susstitute the butter with olive oil.
Bake for approximately 1 hour or until the apples are soft.

 Serve as they are, or with yoghurt, cream, ice cream or custard.
