What’s Cooking?..Simple Roasted Chicken

Hello Everyone.  I know this probably seems obvious and I deliberated about whether to post this recipe or not… But then I thought, it is something I make regularly, ands it’s definitely a go to meal, so why not.

Cooking does need inspiration, but also simplicity, so one will actually make it.  This is simple and easy.   It actually doesn’t require that much effort.   Just get it in the oven.

Whether you are feeding a family or even just yourself, it doesn’t matter, because it makes a wonderful meal and the leftovers can always be used cold or for a salad, sandwich, mornay or reheated again in the gravy.

This is how I do it.

Ingredients

One large roasting chicken free range if possible
Dried thyme
Dried oregano
Chilli flakes
Freshly ground black pepper

Salt

Method

Set oven to 150 degrees Celsius.  Note the weight of the chicken.  Wash the chicken inside and out with cold water.  Place into large roasting pan.  Always remember to wash all surfaces well which have been in contact with the raw chicken.  Rinse your kitchen cloth and microwave for a couple of minutes on high to sterilize it.

Sprinkle the chicken liberally with the herbs and pepper.  Add chilli flakes and salt to taste.  Pour about 1/2 an inch or 1 cm of cold water into the bottom of the pan.

Place into the oven and cook for about 50 minutes per kilo.

When cooked, remove the chicken from the pan a return to the oven to keep warm.

Thicken the pan juices on the stove top with a little plain flour and your favourite gravy powder. Adjust seasoning to taste.

Snow and sugar snap peas and Fig paste which is a lovely accompaniment to both chicken and vegetables.
