What’s Cooking?…Chocolate Truffle Cheesecake
You just won’t believe how simple, easy and delicious this cheesecake recipe is! This may be the only dessert recipe you need this season!
I’m in the mood for cheesecake. I thought chocolate would be good….
With the festive season fast approaching, for those who do not like traditional pudding or prefer a cool dessert, or for the Chocoholics, here’s a delicious dessert / cake which can be prepared, well ahead of time….and is perfect for any occasion. Incidentally its gluten free too!
This is how I do it.
Ingredients
1kg of Neufchâtel cheese (or cream cheese)
1 cup sugar
3 x 80g eggs (or 4 x 60g eggs)
3 tablespoons quality cacao powder
1 tablespoon instant coffee dissolved in 2 tablespoons hot water (or one shot espresso)
1 teaspoon vanilla
Method
Heat oven to 125 degrees Celsius. Line an 8″ springform pan with baking paper.
Beat the cream cheese with the sugar. Gradually add the eggs, mixing well after each addition. Add the cacao powder, coffee and vanilla. Mix until smooth.
Decant the mixture into the lined springform pan. Bake for 2 hours. Remove from oven and allow to cool completely. Refrigerate until ready to serve.
Serve with fresh berries and a dash of cream. Enjoy! Truly Trufflie!
