The main thing that I can recommend when buying seafood is – that it must be fresh or at least freshly thawed! When choosing fish or crustations, they must look glossy! If they appear dry, reconsider…..
I do like a good Marinara. Having said that, it can be as disappointing as it can be good. If it comes out smelling fishy and a bit stewey, that’s a disappointment. I’ve eaten Marinara in restaurants often wishing I had ordered something else. But….if it’s a good one – YUM.
So I’ve cooked it at home many times, and I think I’ve come up with a great solution for success!
Marination! It’s not difficult, just a few minutes of preparation and it’s done!
As soon as you bring your Marinara mix home, marinade and refrigerate. The Marinara will keep quite well for at least a couple of days. Then it can be used for all sorts of dishes.
This is how I do it.
Ingredients
If possible, use a lidded glass or Pyrex dish to marinade the seafood Marinara mix. Put the seafood into the glass or Pyrex dish. Add the rest of the ingredients. Stir through gently to distribute. Cover and refrigerate until required.
When you are ready to use it, it can be used for all sorts of dishes besides a spaghetti Marinara, like this delicious paella for example. I made last night.
