What’s Cooking?…Lemon Sesame Chickpea Salad

I just love hummus and felafal.  I always keep dried chickpeas in my pantry for that reason, in case the mood strikes and naturally they are great for the vegetarians in your family. I wanted to have some of those flavors but not necessarily fried like felafal, or on bread like hummus.  I thought the best solution was to make a salad. This is practically a meal in itself, or it will make a great accompaniment with whatever else you have going, plus you can make this ahead of time.

Incidently, this is a very tasty and nutritious vegan salad!

Ingredients

1 x 400 g tin of chickpeas rinsed, or you can prepare your own.
I x green capsicum
1x red capsicum
1 stick of celery
1 x red onion
2 tablespoons chopped fresh parsley
2 tablespoons tahini
juice of 1 large lemon
1 small clove of garlic crushed
1 teaspoon ground cumin
1 teaspoon ground coriander
pepper and salt to taste
3 tablespoons water
2 tablespoons black sesame seeds toasted

Method

Put the rinsed chickpeas in a serving bowl. Add the finely diced capsicums celery, red onion and parsley and gently mix together.  To make the dressing, mix the tahini with lemon juice , water, cumin, coriander, garlic, salt and pepper. Mix until smooth.  Pour over the salad and fold through.  Add about 3/4 of the tossed sesame seeds and fold them through. Garnish by sprinkling the remainder of the sesame seeds on the top.  Cover and refrigerate until ready to use.
