What’s Cooking? … Modern Muesli Bars.
Whilst muesli bars were always a nice idea and delicious to make at home and have available for a quick afternoon snack or breakfast substitute, they were usually pretty heavy on the sugar, honey and butter, which kind of defeats the purpose of a healthy bar.
That’s why I’ve come up with this delicious, but still healthy Modern Muesli Bar. These have no butter, sugar , honey or flour. Just really good ingredients. They are a good sustaining healthy bar that will get you through that afternoon slump or substitute for breakfast if you are in a hurry. They are a good satisfying substitute for a sweet. I think they are adaptable too and would be great as an accompaniment to a cheese platter, along with fruit pastes. They could also be decorated with a little dark chocolate..
This is how I do it.

Method
Set the oven to 150 degrees Celsius. In a large bowl mix the muesli, almonds, cranberries, sesame seeds and spices. Incorporate the mashed bananas. Mix well.
Then add the grated apple and lemon zest. Mix thoroughly.
Line a 30cm pizza tray with baking paper. Put the mixture on the baking tray. Use a piece of cling film to spread and press the mixture evenly across the tray. Remove the cling film and sprinkle a few extra sesame seeds on top.
Bake for approximately 30 minutes. Remove from the oven. Rest for 5 minutes, then, while still warm, carefully cut the muesli bar into 12 wedges.
Reduce oven to 120 degrees Celsius. Arrange the wedges on a second baking tray leaving room between each one. Return to the oven for about 20 minutes, turn over at half time to dry underside.
