Orange Poppy Seed Cake

This is my current favourite in the cake department, so I thought I must share the recipe with you all today!  It’s appetising and not overly sweet. The orange smell and taste are uplifting and the Poppy seeds give the texture of the cake a very  moorish “bite”.

This is how I do it.

Ingredients 

125g softened butter
1/2 cup sugar
finely grated zest of 2 oranges
2 large eggs
1/4 cup orange juice
1/4 cup milk
1 1/2 cups all purpose flour
3 teaspoons baking powder
1/2 cup of Poppy seeds
 

Method

Set oven to 180 degrees Celsius or 350 degrees Fahrenheit.  Prepare a small 8″ round cake tin.  Line with baking paper.

Cream butter, sugar and zest until light and fluffy.  Add the beaten eggs, mix well.  Then mix in the sifted flour and baking powder, with the milk and orange juice.  Mix until well combined.  Lastly fold through the poppy seeds.

Add the cake mix to the pan.  Bake for approximately 45 minutes or until the cake is golden on top and starts to come away from the sides of the pan.

Remove from pan.  Allow to cool.  Decorate with a little sifted icing sugar if desired.  Make a pot of tea and enjoy!
