Bruschetta can be a delicious light meal which can be consumed at any time of the day (or night).
Although is traditionally an Italian antipasto which is served before a meal, in itself it can make a lovely light meal.
At this time of the year tomatoes are in abundance and why not enjoy those fresh flavours. It is a great raw food kind of dish which makes it an extremely quick and delicious meal. If you are eating alone, don’t feel like cooking, or it’s too late to start preparing a cooked meal, this may be the answer. It also makes a nourishing breakfast.
Heres how I do it.
Ingredients

Method
Use as much or little garlic as you prefer.
Meanwhile wash and chop the tomatoes into bite sized pieces. Tumble them over the toasts, then drizzle with olive oil. Season well with pepper and salt. Garnish with the basil leaves.
Tuck in and enjoy.
