Spinach and Kalamata Salad with Sweet Lemon Dressing.
I have some beautiful Kalamata olives at the moment. They inspired me to make this salad.
This salad could almost be a meal in itself especially with the addition of cheese, chicken or meat. It has lots of colour and lots of variation.
This is how I do it.
Ingredients for the salad
1 1/2 cups of shredded baby spinach
3 small tomatoes cut into wedges
1 small avocado sliced
2 small green banana capsicums sliced
1/2 red onion cut into very tin slices
1/2 cup best quality Kalamata olives
1 tablespoon chopped fresh basil leaves
100 g sliced and fried Haloumi to garnish
Ingredients for the dressing
juice of one lemon
2 tablespoons olive oil
1/2 very small clove garlic crushed
1 teaspoon dried oregano
1 tablespoon sugar
pepper and salt to season
Assemble all the ingredients in a medium salad bowl. Reserve the Haloumi. Mix the dressing ingredients together well until the sugar is dissolved. When ready to serve, drizzle the dressing over the salad then garnish with the Haloumi slices.
