What’s Cooking?..Chocolte Marmalade Cheesecake.

I was busy making a big big pot of marmalade the other day, I made it extra fruity and it was delicious.  At the same time  have also had on my mind to make some kind of a chocolate orange dessert.  That is when I came up with the idea of making this Chocolate Marmalade Cheesecake.  It’s super easy to make.  It’s not overly sweet and just a bit more of a unique adult dessert.  Its got a lovely moussey texture and no stogy base.  Serve with a dollop of thick unsweetened cream, its a lovely flavor contrast. This can be made ahead of time.  The flavour only improves with time.

This is how I do it.

Ingredients for the Cheesecake

500g Neufchatel cheese
1/2 cup sugar
3 eggs
200g Orange Marmalade
2 tablespoons cocoa
250g Riccota Cheese

200g extra marmalade to finish

Method

Set the oven to 150 degrees Celsius.  Line a 25cm round baking tin with non stick baking paper.
In a large mixing bowl, mix the Neufchatel Cheese and sugar together until the texture is even and creamy.

Add the eggs, one at a time, beating well after each addition, Followed by the marmalade.

Next add the cocoa, beating in well.  Lastly add the ricotta cheese and mix until just combined.

Spoon the mixture into the prepared baking pan.

Bake at 150 degrees Celsius for 1 hour and 15 minutes.  Remove from the oven and allow to cool.  Spread the extra marmalade on the top to decorate,  If your marmalade is very thick, warm a little to make it easier to spread.

Serve with a dollop of fresh cream.
